In the morning, we will go on a brief walking tour of Dasà so that you can become acquainted with the village! You’ll have a chance to meet people from the town and become acquainted with the local shops, markets and (most importantly) coffee bar.

The name “Dasà” comes from ancient Greek, and literally means “the place among the olive trees.” Olive oil is central to the local culture, so our first lunch together will focus on this staple ingredient. At the Locanda, we’ll share a lunch highlighting local olive oil.

In the afternoon, we’ll make an excursion to visit some local olive groves where some of the trees are old enough that they may have been planted by the very Greeks who gave Dasà its name.

For those who are still hungry in the evening, we will always have dinner waiting at La Locanda! Perhaps our favorite part of the Dasà experience is gathering around a fire in the evening, sharing food and wine with whoever wants to join.

One of the weekly traditions in southern Italy is making ragù! At La Locanda, Eva and a group of local women from Dasà will teach us how to make handmade tagliatelle pasta, served with southern-style ragù.

Together we will enjoy the fruits of our labor for a well-earned lunch!

In the afternoon, anyone who wants to join can come with us to a local museum to learn about the history of Dasà! Otherwise, there are beautiful hikes to make in the mountains and valleys, local farms to stroll through, and delicious gelato to eat at the bar while chatting with the locals.

Drink, food and song in the evening at La Locanda for all who would like to join!

One of the greatest treasures in Dasà is the local pastry chef, Salvatore Cognetta. His family, though originally from Dasà, founded one of the most important pastry shops in Naples before returning to their Calabrian roots. Salvatore is a true master of southern Italian sweets, from sfogliatelle to... cannoli!

Salvatore has graciously agreed to reveal his secrets with a demonstration of how he makes perfect cannoli, followed by lunch and (of course) a tasting of his handiwork.

In the afternoon, we will gather to learn an important Calabrian skill: dancing the tarantella! Two expert tarantella dancers from Dasà will teach the basic steps of this traditional folk dance to anyone who wishes to learn.

For dinner, we're all invited to one of the local bars for an "apericena"—something in between an aperitivo and a dinner—where we will sample a bunch of delicious treats while we hang out with the locals.

Earlier in the week we learned how to make fresh tagliatelle, and now it’s time for the advanced lesson!

Eva and the local experts will teach us how to make fileja pasta, or as it’s known in Dasà, “maccarruna.” This unique and interesting pasta shape is our favorite, for good reason! Together we’ll enjoy a lunch of the Dasà classic: maccarruna and beans. This will probably be unlike any “pasta fazool” you’ve ever had before!

In the afternoon we'll visit the medieval mill where the people of Dasà used to make their own flour up until recently. Once you see how beautiful it is, you’ll understand why the town is trying to restore it for use!

Dinner at La Locanda, for those who still have an appetite after lunch! This might be a great chance to try leftover maccarruna and beans, a rare pasta dish in that it is best served reheated. You’ll see why!

One of the best parts of living in a small town in southern Italy is the abundance of delicious food delivered right to your door: fresh fish, local produce and... cheese!

To learn about the incredible cheese tradition in Calabria, we will spend the morning with one of the local cheesemakers and see them at work (you can even help milk the goats!). If you've never had hot, fresh ricotta right out of the pot, you're in for a treat!

You won’t find the typical souvenirs in a small town like Dasà, but there is one thing that a lot of people want to bring home: the beautiful, local terracotta pottery. In the afternoon we’ll be joined by a local potter for a demonstration (you can even try throwing some clay yourself!).

In the evening, we’ll share a final, celebratory dinner with the locals. You’ll be glad you learned some tarantella steps earlier in the week!
